Kulfis (also referred as traditional Indian ice cream) are typical Indian dessert since the 16th century. within 500 years, this dessert has evolve in many different taste flavors. Here I came up with an amazing 'Badaam Kulfi' recipe which will tingle your taste buds.
Full Cream Milk – 2 and 1/2 cups
Sugar – 1/2 cup
Badam – 10 nos
Cardamom – 1 whole
Condensed Milk – 1 tbsp
Soak badam for few mins in hot water.Peel the skin.In a blender take sugar,almonds and cardamom.
Grind it to a coarse mixture. Boil milk in a pan and simmer for 15-20mins.stir in between to avoid burning at the bottom.
Keep stirring. When it becomes thick and creamy add sugar nuts mixture and simmer.
Add condensed milk and simmer for 5mins until becomes thick and coats the ladle. Switch off and cool down completely.
Then pour it in kulfi moulds / popsicle moulds…I used only popsicle moulds that suited kulfi ice shape. Cover it with silver foil then freeze for an hour. Then insert ice-cream sticks and freeze it for at least 6 hrs. Then show the mould in running tap water then gently pull the sticks to remove the kulfis.
Serve immediately. *You can also add kesar and pistachios*
